TASTING NOTE: Full-bodied, exquisitely deep colour combined with complex, silky tannins, and succulent bright plum and berry fruit. A wine that speaks of opulence.
VINEYARD: Bush-vine Petite Sirah, planted 2009, in weathered granite soil, from Fairview Farm, just outside Malmesbury.
WINEMAKING: Hand harvested Petite Sirah with 30% whole bunch clusters was cold soaked for 2 days before being wild fermented in open-top stainless-steel tanks; followed by two weeks of extended skin contact. The wine was pressed into 300L older French oak barrels to mature for 8 months prior to bottling.
SERVE & AGEING: Best served at 14 to 18 °C, this wine will develop in complexity over the next 3 - 5 years.
