Produced from 28 separate plots grown mostly on Caillottes, small chunks of Oxfordian limestone, as well as the classic flint soil, ‘Silex’. Average vine age is 35 years. Most of the sites are on south-facing slopes. Hand picked into small cases to ensure intact berries. Fermented and aged in stainless steel, kept on fine lees for six months before being bottled by gravity with no filtration. An archetypal Sancerre.
